Chicken with Rice (Caribbean)
Arroz con Pollo (Caribe)

Ingredients:
1 fryer chicken cut up
1 Tbsp. lard or vegetable oil
2 med. onions, chopped
1 green pepper, chopped
1 8 oz. can of tomato sauce
1 bottle of beer
5 cloves garlic
1/2 tsp. Bijol (if none, use Turmeric)
1 beer bottle of water
1 bay leaf
1/4 tsp. ground cumin
3 cups of uncooked rice

Sprinkle chicken with oregano, garlic, cumin, salt and pepper. In a dutch oven, brown the chicken in the lard (or oil).

Add the onions, green pepper, can of tomato sauce, bay leaf, Bijol,beer and water. Cover and cook on low for 15 minutes.

Add the rice. When the rice has absorbed some of the liquid, cover andsimmer for about 20-25 minutes.Serves a family of 6.
